Killara Distillery

Killara Distillery is a boutique Tasmanian distillery in Richmond, producing handcrafted single malt whisky and other spirits from locally sourced ingredients. Its range includes whisky, Apothecary Gin and liqueurs, with the distillery describing its approach as “Garden to Glass”. The venue has a strong family connection to Tasmania’s whisky industry. Killara was named after the street where Kristy Lark’s parents, Bill and Lyn Lark, registered the first modern Australian whisky distillery in 1992. The business continues that family tradition through Kristy Lark-Booth, a second-generation Australian distiller with more than 18 years of experience. Before establishing Killara, Kristy worked as head distiller and general manager at Lark Distillery, where the whisky she produced received national and international industry awards.

A distinctive part of the story is Killara’s 600-litre copper pot still, specially designed and made in Hobart. Its condenser sits at the top rather than the side, an unusual design that the distillery says helps produce its smooth, distinct spirit. Killara also aims to work with local producers and small businesses, keeping its spirits connected to the Tasmanian community and landscape.
